1 1/2 pounds veal scaloppine or skinless, boneless chicken breasts, pounded thin
1/2 cup flour
1 1/2 sticks melted and clarified butter
1 pound mushrooms, cleaned and sliced
3/4 cup Florio Sweet Marsala
1/4 cup Grand Marnier
juice of 1/2 lemon
1/4 teaspoon white pepper

Directions:
Directions:
Flour veal (or chicken) on both sides. Shake off excess flour and set aside.

Heat butter in frying pan (do not burn). Saute mushrooms in butter for 2 to 3 minutes, until lightly browned. Remove with slotted spoon and set aside. In the same pan, saute veal (or chicken) on both sides, lightly, over low to medium heat. Remove meat and set aside.

Pour wine into saucepan and stir. Add Grand Marnier, stir and ignite to burn off alcohol.

After flame dies, put veal (or chicken) back in saucepan. Stir in lemon juice and pepper. Simmer for 3 to 5 minutes. Pour sauteed mushrooms over veal or chicken. Garnish with lemon slices.
