2 tablespoons butter
1 tablespoons oil
3 tablespoons flour
2 cups milk (I use 2%)
1 cup white sharp Cheddar, grated
1/3 cup Parmesan cheese, grated
1 pound of Cellantani pasta (I used Barilla)
salt and pepper, to taste.
1 ounce of dried porcini or shitake mushrooms
1 or 2 small shallots, minced
1 tablespoon olive oil

Reconstitute mushrooms by soaking in water for at least 20 minutes. Then rough chop them and sauté them with shallots in a small skillet until shallots are soft. Set aside.

Place a pot of salted water on a hot stove and when water boils, add pasta and cook until just al dente. Drain pasta and set aside.

To make the roux, melt butter with oil and then add the flour and cook for 1 to 2 minutes to cook out the raw flour taste. Then slowly whisk in milk to avoid lumps. Once the mixture reaches the desired thickness, add cheese. Then fold pasta and mushrooms into the sauce and heat through on the stove or cook at 400 degrees until the top is golden and bubbly.
