1 pound large mushrooms (3 per person)
melted butter
3 tablespoons butter
1 tablespoons flour
1/2 cup milk
1/2 cup finely chopped scallions or onions
1 (6-ounce) package frozen crab meat, thawed
1 tablespoons cognac
1 egg yolk
Tabasco sauce, to taste
salt and pepper, to taste
1/4 cup grated Parmesan cheese, preferably fresh
3 tablespoons butter, melted

Preheat oven to 400 degrees.

Remove stems from mushrooms and set aside. Place mushroom caps hollow-side down in a buttered baking dish. Brush with melted butter and bake 10 minutes.

Make white sauce of 1 tablespoon butter, 1 tablespoon flour, and 1/2 cup milk. Stir until thickened and add seasonings. Saute scallions or onions and chopped mushroom stems in butter for about four minutes. Add crab meat and cognac, mixing well. Add white sauce, egg yolk, and Tabasco sauce. Cook gently until mixture holds together well.

Stuff mushroom caps with crab mixture. Sprinkle with Parmesan cheese, and brush with melted butter. Bake at 400 degrees for 20 minutes.
