3 eggs
1 1/4 cup oil or melted margarine
2 cups white sugar
2 teaspoons vanilla
2 cups flour
1 teaspoon cinnamon
2 teaspoon baking soda
1 teaspoon salt
1/2 cup shredded coconut
1 1/2 cups crushed pineapple (do not drain syrup)
1/2 cup chopped walnuts
1/2 cup raisins
2 cups grated carrot

Cream Cheese Frosting:

1/2 cup butter
6 ounces cream cheese
3 cups powdered sugar
2 teaspoons vanilla

Directions:
Directions:
Mix first 8 ingredients together, then add the remaining 5. Pour mixture in a greased 9” x 13” pan. Bake for 50 minutes at 350 degrees. Let cake cool thoroughly and then frost.

Mix frosting ingredients together and beat until very smooth and spread over the cake.
