1/2 cup vegetable oil
1/2 cup all-purpose flour
2 cups frozen sliced okra
1 cup celery, finely chopped
1 cup onion, finely chopped
1/2 cup green onions, finely chopped
1 (16-ounce) can tomatoes
1 (8-ounce) can tomato sauce
2 (10.75-ounce) cans beef broth
2 pounds shrimp, peeled and deveined
1 (6-ounce) can lump crab meat
1/4 teaspoon minced garlic
1 teaspoon black pepper
2 teaspoon salt
1/2 teaspoon seasoned salt
3 bay leaves
1/4 teaspoon thyme
1/8 teaspoon oregano
2 tablespoons sugar
1 teaspoon Tabasco sauce
1/2 teaspoon cayenne pepper
1 tablespoon dry sherry

Directions:
Directions:
Place flour on a foil-lined baking sheet and bake in a 350 degree oven for 30 minutes or until lightly browned.

Place flour in a large, heavy pot and whisk in oil. Being careful not to burn, make a roux, by stirring constantly over a low to medium heat until mixture is a deep, dark brown color.

Combine okra, celery, onion, and green onion, and saute in the roux until tender. Add tomatoes, tomato sauce, broth, and seasonings.

Simmer for 2 to 3 hours. Add seafood the last 10 minutes. Serve over rice in large bowls.
