6 boneless skinless chicken breasts
2 eggs slightly beaten
1 cup bread crumbs
3/4 cup olive oil
6 slices mozzarella cheese
1 pint heavy cream
1 cup grated parmesan cheese

Directions:
Directions:
Dip chicken in eggs and then coat with bread crumbs
In a large skillet heat oil until moderately hot.
Place chicken in the skillet and brown lightly on both sides.
Remove from pan and place in baking dish.
Top each chicken breast with a slice of mozzarella cheese.
In a saucepan mix together the heavy cream, parmesan cheese and salt and pepper.
Cook until mixture is hot and has thickened.
Pour over chicken and bake 25 minues at 350 degrees until cheese is melted and light golden.

This is great served over pasta.Dish can be prepared and set aside in the refrigerator for a day or two.
