Directions:Make the Chicken Stew: 1. Heat the oil in a large skillet. Season the chicken with salt and pepper and add it to the skillet. Cook over high heat, turning occasionally, until browned and crusty all over, about 10 minutes. Using a slotted spoon, transfer the chicken to the slow cooker. 2. Add the onion and carrot to the skillet and cook over moderately-high heat until just softened, about 5 minutes. Add the flour and cook, stirring, until toasted and the vegetables are lightly browned, about 5 minutes. Stir in the broth, heavy cream and herbs, then bring to a boil. Pour the mixture into the slow cooker and stir in the butternut squash. Set the slow-cooker to high and cook with the lid ajar just a crack for 3½ hours, or until the chicken and vegetables are tender. Stir in the peas. Make the Biscuits: 1. Preheat the oven to 400°F. 2. In a large bowl, using a pastry blender or two knives, cut the chilled butter into the flour until it resembles coarse meal. 3. Stir in the milk to form a soft dough. 4. Using an ice cream scoop or spoons, dollop 2-tablespoon mounds of dough onto the chicken stew. 5. Brush with the melted butter and bake in the center of the oven until the biscuits are golden, about 30 minutes. Let sit 10 minutes before serving. |
