diagonally sliced peeled carrots
1 tsp. minced fresh ginger (optional)
1 c. packed brown sugar
1 1/2 c. toasted pecan halves

1. Heat oil in frying pan over medium-high heat
2. Add carrots & cook, stirring frequently
3. Add ginger & sugar, stirring until sugar melts
4. Add pecans & cook until carrots cooked
