Ingredients:  
2 pastry shells ( i like Marie Callender, very buttery tasting)
2 zucchini, slin removed and sliced thin diagonally
1 eggplant, skin removed and diced
1/4 cup butter
1 small tomato peeled and diced
1 small green pepper diced
basil and thyme
6 eggs
1 cup milk or heavy cream ( i usually use milk)
1 cup parmesan cheese

Directions:
Directions:
Bake empty pastry shells
Saute zucchini, eggplant, onion and garlic in butter for about 5 minutes
Stir in tomato, green pepper, salt, pepper, basil and thyme
Heat 10-15 minutes until vegetables are tender and liquid is evaporated.
Spread vegetables in both crusts.
Beat eggs and cream until mixed but not frothy.
Pour egg mixture into shell.
Top with grated cheese.
Bake 375 for 35 minute
