1 medium spaghetti squash
1 tbsp. olive oil
1 tbsp butter
1 tbsp. garlic
1/3 cup sour cream
1 cup chicken stock
1/2 cup grated parmesan cheese

Directions:
Directions:
Cut the spaghetti squash in half and remove seeds. Place in baking dish with one inch of water on bottom and skin side up. microwave for 12 to 15 min. Fluff and separate the strings with a fork and transfer to bowl for later.

While squash is cooking in microwave heat olive oil and butter in a large sauce pan or skillet over medium heat. Add the minced garlic and stir for one minute. Season with salt and peppers. Add the chicken stock and turn the heat up to high and let it come to a boil.

Add spaghetti squash and cook for a couple of minutes. Take the saucepan off the heat and add parmesan cheese and stir until completely melted. Add the sour cream and cook for 2 minutes.
