1 stick butter
1 bell pepper
1 lg. chopped onion
2 ribs celery
4 cloves pressed garlic
¼ c. fresh parsley
3 Tbs. flour*
3 Tbs. tomato paste*
2 bouillon cubes*
2 c. water*
2 tsp. salt *
1 tsp. pepper*
1/2 tsp. chili pepper*
1/2 tsp. Tabasco*
1 lb. crawfish or shrimp
1 bunch green onions

Directions:
Directions:
In melt butter, add bell pepper, onion, celery, garlic and parsley and cook until tender.
Dissolve bouillon in water. Add flour and tomato paste. Cook a minute. Gradually add water; constantly stirring.
Add salt, pepper and Tabasco. Simmer 1 hour.
Add peeled seafood and parsley. Simmer until shrimp is cooked through. Serve over rice.

*I like to double the gravy. I increase the flour, tomato paste, bouillon, and possibly seafood to make more gravy.
