5 Tbs. butter
1/2 tsp. hot sauce
4 Tbs. flour
1 bunch green onion
1 pt. whipping cream
2 Tbs. parsley
1 lb. crawfish tails
1/4 tsp. salt
1 c. grated cheddar cheese
1/2 c. mozzarella
1/8 tsp. pepper
2 Tbs. white wine
1 tsp. Worcestershire sauce

Melt butter in skillet. Add bottoms of green onions and 1/2 of tops and simmer 1 minute. Add flour and cook 2 minutes. Heat cream and add to flour mixture. Simmer 5 minutes. Add crawfish and remaining ingredients except mozzarella. Pour into a buttered baking dish and sprinkle with mozzarella. Bake at 350º for 25 minutes.
