2 lb. meat (pork & sausage)
1 large chopped onion
2 Tbs. dried bell peppers
1 Tbs. minced garlic
2 heaping Tbs. roux*
3-4 Tbs. ketchup
4 cups water
1 Tbs. Dale's seasoning or soy sauce
Pepper & salt
4 cups minute rice

Cube pork and sausage. Sauté in iron pot with a small amount of oil until brown. Remove meat from pan. (*Make roux Add 2 ˝ Tbs. oil and 3 Tbs. flour. Brown until the color of a pecan on very low heat.) Add onion and dried spices, and sauté a minute. (If roux is already made add and stir until blended with the meat and vegetables). Add water to mixture and add remaining ingredients except rice. Salt to taste. Taste liquid to see if it is salty enough. Bring to a boil and add instant rice and remove from heat and let sit for 5-10 minutes cover. Fluff with a fork and serve.
