3 lbs Carrots sliced
1 c Butter
6 lg Eggs
1/2 c Plain Flour
1 tsp Baking Powder
3 c Sugar
1 tsp vanilla

Directions:
Directions:
Cook carrots until fork tender, drain. Place cooked carrots, butter and remaining ingredient in food processor. Process until smooth stopping and scraping sides at least twice. Spoon into 2 lightly greased 11/2 quart souffle or baking dish. Bake @ 350º until set in middle. Sprinkle with powdered sugar.
