New Years Pretzel Recipe

2 packages yeast
1/4 cup lukewarm water
1/4 cup shortening
1/2 cup sugar
1 teaspoon salt
2 eggs -- beaten
1 cup milk -- scalded
1 teaspoon lemon rind
5 cups sifted all purpose flour

Glaze:
milk
vanilla
Powder sugar

Directions:

Soften yeast in lukewarm water.

Add shortening, sugar, and salt to scalded milk; cool to lukewarm.

Add softened yeast, eggs, lemon rind, and enough flour to make a soft dough. Beat soft dough 200 about strokes.

Add remaining flour and turn onto lightly floured board and knead until satiny.

Form dough into a ball folding all ends into center. Grease top of dough and place into a well greased bowl.

Cover bowl and let rise until doubled in bulk.

Punch down, cover, and let rise again.

Punch down and let rest for 10 minutes (covered).

While the dough is rising, get ingredients ready to place inside the coffee cake.

Blanch raisins in water until they are plump. Let drain on paper towels.

Grind pecans.

Make cinnamon sugar.

Melt butter.

Roll dough out into a long rectangle shape.

Place butter, cinnamon sugar, pecans, and raisins on top of dough.

Roll dough jelly roll style.

Pinch ends.

Move dough to greased cookie sheet.

Stretch and pull dough into a pretzel shape.

Cover pretzel with a damp cloth and let rise until doubled in bulk.

Bake in moderate oven (375 degrees F) for 25-30 minutes. Should be hollow sounding when tapped.

While pretzel is hot, brush with glaze and sprinkle with pecans.
