3# Coarse Ground Chili Meat (We usually use 1/2 venison & 1/2
beef)
6 T Chili Powder
1 T Ground Oregano
1 T Ground or Crushed Cumin
1 T Cayenne Pepper
1 Large Onion, Chopped
2 Large Cloves Garlic, Minced
2 ea. 8 oz. Cans Tomato Sauce
3 C Water
3 T Masa Harina mixed with a little water

Brown meat well. Add meat, garlic, onion, tomato sauce, water and spices to large pot. Bring to a boil and then reduce heat to a high simmer. Allow to cook for at least three hours. Mix Masa with about 1/2 C water and add to chili to thicken.

This is an award winning chili recipe with many variations. I've used crushed tomatoes instead of tomato sauce, added Rotel, and if I didn't have enough fat, ground up some beef tallow and used it.
