Palamino Pork Tenderloin Recipe

Ingredients:  
1 pork tenderloin
1 pkg. pancetta (chopped) (or proscuitto can be used)
4-6 cloves minced garlic
2 Tbsp. fresh rosemary (minced)
1/2 tsp. salt
1/2 tsp. pepper
1/4 cup olive oil
1/3 cup shallots or onion (chopped)

SAUCE:
2 cups cream
4 Tbsp. butter
1-2 Tbsp. Dijon mustard

Directions:
Directions:
Mix pancetta, rosemary, garlic, and olive oil. Add salt, pepper, and shallots. Rub half of this mixture over the pork tenderloin. Cook pork at 350º to 160º (approx 30-40 minutes). Saute other half of mixture until golden. Add cream, butter, and dijon. Cook until reduced to a thicker sauce. Pour over pork to serve. The sauce can be made ahead.

Sometimes I choose not to rub the mix on the pork but instead just add it all to the sauce. I also have served the sauce on the side for those people (like Dad) who prefer their pork plain!
