4 large eggs, beaten
3 cups white sugar
2 cups vegetable oil (I use canola oil)
2 cups buttermilk
2 teaspoons baking soda
6 cups all-purpose flour
1 1⁄2 teaspoons salt
2 tablespoons baking powder
3 teaspoons vanilla extract
cinnamon sugar

Directions:

Preheat oven to 400°F.
In a very large mixing bowl, cream together; eggs, sugar, and oil.
Add buttermilk, baking soda, salt, baking powder.
Gradually beat in flour, and beat until mixture is smooth.
I add an extra 1 1/2 cups to 2 cups flour.
(If you let the batter sit for about 5 minutes after beating in all the flour, it will be easier to put on cookie sheets and won't spread out as much.) Pour by 1/4 cupfuls onto a greased cookie sheet.
Sprinkle tops of cookies with cinnamon sugar.
Bake at 400° for 7-8 minutes. Watch carefully and do not over bake.


If the cookie springs back when touched, it's done.

These are good by adding frosting or adding chocolate chips. I have made these half with frosting and then add chocolate chips to remaining batter.
Frosting can be cream cheese frosting or a butter cream frosting.
Cream Cheese frosting: 1/4 stick butter, 4 oz. cream cheese, powder sugar, milk, and vanilla.
Butter Cream or Crisco frosting: 1/2 cup butter or Crisco, powder sugar, pinch of salt, milk and vanilla.
