Coconut Green Curry Chicken:
1-2 tbsp Taste of Thai green curry paste
1 can coconut milk
1 tbsp brown sugar
1 pound chicken breast, cut into bite size pieces
1 cup assorted vegetables
1 small can bamboo shoots
1/4 cup fresh Thai basil, chopped finely
1-2 tbsp fish sauce

Cilantro Jasmine Rice with Peanuts
1 3/4 cup jasmine rice
1/2 cup salted peanuts, chopped
1/2 cup cilantro
4 scallions, chopped
1 tbsp peanut oil
2 tbsp seasoned rice vinegar
1 tbsp lime juice
salt and pepper to taste

Coconut Green Curry Chicken
1. Cut Chicken breasts into 1 inch pieces.
2. Pour coconut milk into Large skillet and add curry paste, bring to boil
3. Add in brown sugar, stir, reduce heat to simmer.
4. Add in chicken, mixed vegetables, bamboo shoots, and fish sauce.
5. After chicken is cooked, remove from heat and add in the thai basil.

Cilantro Jasmine Rice with Peanuts
1. Cook rice according to package directions
2. Chop peanuts and cilantro in a food processor, only until roughly chopped
3. Add peanuts and cilantro into rice with chopped scallions, peanut oil, rice vinegar, lime juice and salt and pepper to taste.

Serve the Green Curry Chicken over the Jasmine Rice and enjoy!

This is my dad's recipe that introduced me to the wonderful world of Thai food and has became one of my all-time favorite recipes! This recipe is so versatile you can cook it with shrimp instead of chicken, or substitute for red curry paste. Enjoy!
