1lb. brown sugar
2 eggs
1 small can pumpkin
1 tsp. salt
1 tsp. baking soda
3 c. flour
1 tsp. baking powder
1 tsp. each, cinnamon ginger and ground cloves
1 tsp. vanilla
1 c. oil

Directions:
Directions:
Cream sugar and oil. Add eggs and pumpkin. Sift dry ingredients together. Gradually add dry ingredients to wet and mix. Drop by tablespoon onto ungreased tray. Bake at 350º for 10 minutes.

Cool completely. Frost bottom side of one cookie with your favorite frosting. (I use cream cheese frosting) Top with a second cookie. If using cream cheese frosting, refrigerate cookies.
