Ingredients: Dry ingredients: 1 1\2 cp flour. 1 tsp baking soda. 1 tsp baking powder. 1\2 tsp salt. Wet ingredients: 1\3 cp butter, melted. 3 over ripe banannas, peeled and mashed. 3\4 cp sugar. One egg. Strussel topping: 1\3 cp packed brown sugar. 2 tsp flour. 1\4 tsp cinnamon. 1 tbsp softened butter.

Directions:Pre-heat oven to 375. Sift dry ingredients together in a medium mixing bowl. In a large bowl, mash 3 large over ripe banannas with a fork or potato masher. Add 3\4 cup sugar and one egg. Mix together well. Mix in 1\3 cup melted butter. Stir in dry ingredients until moistened. Fill muffin cups 3\4 full. Strussel topping: In small bowl, add 1\3 cup packed brown sugar. 2 tsp flour. And 1\4 tsp cinnamon. Mix together sell with a fork. Add 1 tbsp softened butter and mix till crumbley. Spoon or fork topping evenly over muffins and bake for 18 to 20 minutes at 375 or until a toothpick comes out clean. |
