2 eggs
1 cup oil
2 cups brown sugar
1 tsp vanilla
1 1/2 cups flour
1/2 tsp salt
1 tsp baking soda
1 tsp baking powder
3 cups quick oats
Powdered sugar

Directions:
Directions:
1) Using mixer, combine the brown sugar and eggs.
2) Add the oil & vanilla and mix well.
3) Gradually add the dry ingredients.
4) Refrigerate cookie dough for 1 hour.
5) Roll into walnut sized balls and roll in powdered sugar.
6) Place on ungreased cookie sheet and do NOT flatten!
7) Bake at 350 degrees for 10 minutes. Remove while still soft.
8) Let sit on cookie sheet for 5 minutes before removing and placing on cooling rack.
