Bag of Baby Spinach
1 small diced sweet red onion
1 can of mandarin oranges
1 cup of dried cranberries (Trader Joe's)
1 bag of candied pecans or almonds (Trader Joe's)
Dressing:
1/2 cup Orange Juice concentrate
1/2 cup Cranberry juice concentrate
1/4 cup honey
1/3 cup Champagne Vinegar
1/2 tsp Salt
1/2 tsp fresh ground Pepper
1 tsp dried tarragon (optional)

Directions:

Mix all salad ingredients together in a nice bowl. Whisk all dressing ingredients and toss right before serving.
