1 (3 lb.) chicken (Can add 2 breasts)
1 onion
2 or 3 stalks celery
3 chicken bouillon cubes
2 cups rice (May add 1/2 cup more) ---not instant rice

Directions:
Directions:
Cook chicken with whole onion, celery, bouillon cubes, salt and pepper with water to cover about 45 minutes or until tender. Remove onion and celery. Cool chicken and cut into pieces. Add rice and about 4 or 5 cups of the chicken broth. Cook over low heat until rice is done. Stir often. Serve with chilled cranberry sauce.
