Combine:
2 c. sugar
3/4 c. buttermilk
3/4 c. vegetable oil
3 eggs, beaten
2 tsp. vanilla
Combine and add:
2 c. flour
1/2 tsp. salt
2 tsp. baking soda
2 tsp. cinnamon
Add:
2 c. grated carrots
1 8 oz. can crushed pineapple, drained
1 can flaked coconut

Directions:

After ingredients are mixed together, pour into 3 greased and floured 9 inch pans. Bake at 350 degrees for 35-40 minutes.

Cream cheese frosting:
1 8 oz. softened cream cheese
1/2 c. softened butter
1 lb. powdered sugar
1 tsp. vanilla
