Ingredients: 2.5 lbs lean burger meat 1 small brown onion, diced small 2 LG cans Las Palmas Enchilada Sauce (yellow Label) 1 small can Las Palmas Enchilada Sauce 1 lb grated cheddar cheese 1 lb grated Jack cheese 2 cans chopped black olives 1 can whole olives, drained 2 dozen corn tortillas Pam spray and oil for pans 2 green onions for garnish

Directions:Cook onion with meat, drain grease and remove from heat. Add 1 large can of enchilada sauce. Stir & drain again. Heat 1/2 inch of oil in a pan and cook tortillas 7-10 seconds each side. As it bubbles flip them but keep soft. Put on paper plates lined with paper towels to drain. Empty 1 Lg can of enchilada in a pie plate and dip both sides of tortillas. Take a handful of meat, a few pinches of chopped olives & jack cheese. Roll edges to the middle just overlapping. Spray 9 x 13 pan and fill. Use the small can of enchilada sauce and spoon a light coat over the top. Put a whole black olive on top of each and sprinkle remaining jack & cheddar cheese covering completely (over olive) Add green onion if desired. Cover with foil. Cook at 325 for 35-40 minutes until hot & melted. |

Notes: To substitute chicken: use 2.5 lbs of boneless chicken that has been boiled for 40 minutes and shred. No onions for chicken recipe.
