5-6 medium green peppers
3/4 c. uncooked brown rice
1 lb. lean ground beef
1 med. onion, chopped
1 can (8 oz.) tomato sauce
1/4 tsp. dried basil
1/2 tsp. dried oregano
1/4 tsp. dried thyme
1/2 tsp. salt
Pepper to taste (I probably use 1/2 tsp.)
1/2 tsp. instant beef bouillon dissolved in 1/2 c. hot water

1. Remove tops and seeds from peppers.
2. In a large kettle, bring water to a boil; cook peppers for 5 mins. Remove & drain.
3. Cook rice according to package directions.
4. In a skillet, brown beef and onion. Drain. Add tomato sauce, herbs salt and pepper; cook 5min.
5. Stir in rice. Stuff peppers with the rice mixture. Place upright in a shallow baking dish or casserole.
6. Bake at 375º for 15-20 mins.

*for some extra flavor, I like to add bouillon to the pan when the peppers are baking. It also steams them a little. If I'm using chicken or turkey instead of beef, I use chicken bouillon. (Leftover peppers freeze well to enjoy later)

Note: Sometimes I didn't cook the peppers; just much more crunchy (raw).
