1 ¼ cup oil
1 ½ c. flour

Directions:

Place ingredients in an iron skillet and brown on very low heat until the flour mixture is about the color of pecans. Stirring constantly to make sure it doesn't burn. Remove from the heat and allow to cool. Place in a pint jar and store in refrigerator.

The base of so many southern dishes is a roux. One of the tests of a true southern cook is how well a roux they make. A Roux can be placed in a jar and keep in refrigerator after cooling to use at any time. I will even double the recipe. My mother-in-law cooks hers in the microwave to save on time and mess.
