3 cups diced cooked chicken
2 medium celery stalks, finely chopped
1 (8 oz.) sliced chestnuts - drained
1/3 cup sliced almonds
1 (2 oz) jar pimentos, undrained
1 TBSP minced onion
3/4 cup light mayo
2 TB lemon juice
1/2 tsp. salt
1 tsp black pepper
1 cup (2 oz) French fried onions
6 oz. shredded cheddar cheese

Directions:

1. Preheat oven to 350º, grease 11 x 7 baking dish
2. Combine chicken, celery, chestnuts, almonds, pimentos, onion, lemon juice, salt & pepper in large bowl and mix well.
3. Place in prepared dish and top with french fried onions and cheese.
4. Bake uncovered 30 min. Or until cheese melts.

If it's been refrigerated give it more time

A couple of hints.....
Rather than cook the breasts, I bought a rotisserie chicken

The last time I made it I waited to put the cheese and onions on after the 30 min. bake and put it back in oven until cheese melted.
