2 pieces salted cod fish
2 medium potatoes
1 tablespoon parsley, minces
2 egg yolks
2 egg whites, beaten stiff
1 pinch garlic and pepper

Directions:
Soak codfish in water overnight. Boil potatoes with fish, cook and drain. Cool. Mash potatoes and shred fish in small pieces with fingers. Mix in parsley, garlic and pepper, yolks and finally egg whites. Heat oil in a deep frying pan, fry croquettes, shaping them with two tablespoons, switching the batter from one spoon to the other a few times. Fry over low heat until golden brown. Makes 18 - 20

This easy continental-style recipe for salt cod can be used as an appetizer for a party, as a snack, or as part of a simple meal when combined with rice and greens. It is a recipe served frequently throughout the year and always on Christmas Eve. To form cakes, use two teaspoons; with one hand, take a spoonful of mixture, and with the other hand and a rotating motion, insert the bowl of the second spoon behind the mixture, scooping it out of the first spoon. Repeat several times, back and forth, to obtain an oval shape and smooth finish. This technique does take a little practice!
