1/2 cup shortening
2 cups sugar
2 eggs
4 cups fresh apples, finely chopped
1 tsp cinnamon
1 tsp nutmeg
1/2 tsp salt
2 tsp vanilla
2 tsp soda
2 cups flour
1 cup nuts

Icing:
3 oz. cream cheese
1/4 cup butter
2 cups powdered sugar
1 tsp. vanilla

Directions:

Blend shortening and sugar. Add eggs. Blend well. Add spices and soda. Fold in flour. Add apples and nuts.

Bake 35 minutes at 350 degrees. The recipe doesn't say what size pan to use.

Mildred Lynch was a friend of mother's and belonged to their Bridge Club. Many friendships were made, fun recipes shared and enjoyed and we loved sampling the butter mints and bridge mix before they came. We also loved sitting on the steps and listening to them giggle all night. We could hear Mother's fun laugh above them all!
