3 C. self-rising cornmeal
3 eggs, well-beaten
1 1/2-1 3/4 C. milk
4-5 jalapeņo peppers, chopped fine
1 C. cream style corn
1 C. grated cheddar cheese
1 onion, chopped fine
1/4-1/2 C. bacon grease (or oil)
1 1/2-2 T. sugar

Directions:
Preheat oven to 400°. In large bowl, mix cornmeal and milk. Stir in eggs and bacon grease. Add pepper, corn, cheese, onion and sugar. Stir well. Use a divided (8-piece) cast iron skillet. Oil the skillet well and preheat before spooning in mixture for best results. Bake for 30-35 minutes.
