1 onion, make it sweet like Maui or Vidalia
1/4 cup olive oil
1 ½ lbs sirloin steak cubed - I buy high end Angus steak from Trader Joe's
5 large garlic cloves minced
3 bay leaf
16 tbsp soy
16 tbsp coconut vinegar THIS IS A MUST. Has to be Coconut Vinegar from Asian market.
Keep opened bottle in fridge for ever.

Brown onion in oil. Add garlic. Brown meat and add bay, soy and vinegar.
Simmer till beef is tender. I make it ahead so the meat gets tenderized by sauce. Let it sit for the day in the juices. Serve over white rice.
