3 tbsp. oil
1 1/2 lbs. pork butt, cut into one inch cubes
1/2 cup corn starch
1 1/2 cups diced onion
3 large garlic cloves, minced
6 cups chicken broth
1 lb. potatoes, cut into 1/2 inch cubes
2-3 tsp salt (to taste)
1 tsp cumin and 1 tsp Mexican oregano
1-3 cups roasted, chopped, hot green chile (to taste)
3-5 tbsp. diced red bell pepper
2 tbsp. chopped cilantro (more for garnish)

Directions:

1) Put corn starch in paper or plastic bag, add cubes of pork and shake.
2) Heat oil in soup pot over medium high heat. Take pork cubes out of bag, shake off excess corn starch and add to hot pan. Brown in batches until crispy. Put aside.
3)Add more oil if needed and saute onions and garlic in same pot for 3 minutes. Add potatoes,add salt and spices. Add broth. Add half cup green chile.
4)Bring to boil. Reduce heat and simmer for 30 minutes.
5)Add more green chile ( 1/2 cup or more) depending on how hot you like it.
Also add the pork, chopped red bell pepper and cilantro.
6) Simmer for 30-50 minutes and serve garnished with chopped cilantro.

Note: For a short cut method, use two 12 oz. packages of Trader Joe's fully cooked Traditional Carnitas. Cut it into cubes (don't cut away the fat) and proceed to step one.
I love to make a double batch of this for the Christmas holidays when the Cruz gang gets together at our house. You can make a milder version, and serve chopped green chile on the side. I like to serve it with cornbread and cole slaw.
