Pie crust (baked as directed)
1/2 cup sugar
1/4 cup cornstarch
4 egg yolks
2 cups half and half
3 T. butter
1 tsp. vanilla
1 cup coconut
2 cups whipping cream
1/3 cup sugar
1 1/2 tsp vanilla

Directions:
Directions:
1. Mix sugar, cornstarch, 3gg yolks, and half and half.
2. Boil one minute, stirring often
3. Remove from heat
4. Add butter, 1 tsp. vanilla and coconut
5. Mix well and pour into baked pie shell
6. Let cool

Meringe:
1. Beat whipped cream
2. Add 1/3 cup sugar and 1 1/2 tsp. vanilla
3. Spread on cooled pie

Optional:
Sprinkle toasted coconut on top.

A high school friend posted this recipe on facebook, and it looked like an easy pie to make, so I tried it. It is fast and it's yummy. Enjoy!
