8 oz. can crushed pineapple
3 oz. pkg. lime jello
1 cup boiling water
3 oz. pkg. cream cheese, softened

Directions:
Directions:
Drain pineapple; reserve the juice. Dissolve the jello in boiling water. Add enough cold water to the pineapple juice to make 1 cup. Add to the jello mixture and chill until solid. Beat the hardened lime jello with a mixer, then add the pineapple and cream cheese. Turn into a greased jello mold when ready.

Our mother always hosted the holidays, and this jello mold was always present. It was so good, that some of us would save it for dessert.
