11/2 lb. ground beef
2 med. onions
1 tsp. salt, pepper and chopped garlic
1-3 T. chopped green chilies or jalapeños (add more for a spicier dish)
1 can stewed tomatoes
11/2 - 2 cups uncooked rice (cook ahead of time)
11/2 cups grated Monterey Jack cheese
1 cup sour cream

Directions:

In a large skillet, sauté beef with onions, salt, garlic salt and pepper until meat is done. Spoon off fat. Add stewed tomatoes and jalapeño peppers.

Add the cooked rice, grated cheese and sour cream and mix well.

Transfer to a 2 qt. greased casserole. Top with 1/2 cup of cheese.

Bake in a 350º oven for 30 min. or until bubbly and heated thoroughly.
