Stuffing:
3 T butter or margarine
1/3 cup chopped onion
1/3 cup chopped celery
1 cup packaged herb-seasoned stuffing

Meat Mixture
1 egg
1 ½ lb ground chuck (or ground turkey)
½ cup milk
1/3 cup raw quick-cooking oats
¼ cup finely chopped onion
1 T chopped parsley
1 ½ tsp salt
1/8 tsp pepper

4 cooked carrots (or about 12 baby carrots)
6 slices of bacon
¼ cup chili sauce
2 T dark corn syrup

Make Stuffing: In hot butter in small saucepan, sauté 1/3 cup onion and the celery until tender – about 5 minutes. Add stuffing and 1/3 cup water. Mix well and set aside.

Preheat oven to 350F

Make Meat Mixture: In medium bowl, beat egg slightly with a fork. Add meat, milk, oats, onion, parsley, salt and pepper. Mix lightly until combined.

Turn onto large sheet of waxed paper. With moistened hands, pat into 12x9 inch rectangle. Spread evenly with stuffing. Arrange carrots lengthwise down center.

Starting from the long side, roll up like a jelly roll, peeling off waxed paper while rolling. Place, seam side down, in 12x8x2 inch baking dish. Arrange bacon slices close together over top; wrap around roll.

Bake 45 minutes. Mix chili sauce with corn syrup, brush over top of meat roll between bacon slices. Bake 5 minutes longer.

Let stand in baking dish 5 minutes; then carefully remove to serving platter.
