1 large head cauliflower
1 cup heavy cream
1 tablespoon all-purpose flour
1 cup grated Parmesan
coarse salt and ground pepper
1/2 cup fresh breadcrumbs
1 tablespoon unsalted butter

Directions:
Directions:
Preheat oven to 400º. In a large bowl, combine 1 large head cauliflower, cored and cut into florets, 1 cup heavy cream, 1 tablespoon all-purpose flour, and 3/4 cup grated Parmesan. Season with coarse salt and ground pepper and toss to combine. Transfer mixture to a 2 quart baking dish, cover tightly with foil, and bake 30 minutes. In a small bowl, combine 1/4 cup grated Parmesan and 1/2 cup fresh breadcrumbs. Spinkle over cauliflower. Dot with 1 tablespoon unsalted butter, cut into small pieces, and bake uncovered, until topping is golden brown and cauliflower is tender when pierced with a knife, 10 to 15 minutes. Let cool 5 minutes before serving.
