1 butternut squash
1 lb brussel sprouts
1 onion

pepper
1 tsp ancho chili powder
1/4 cup olive oil
1/8 cup honey, maple syrup, or pomegranate molasses
1/2 lb bacon
1 cup fresh pomegranate arils

Directions:
Directions:
Preheat oven to 400º.

Cut butternut squash into 1/2 inch dice; cut onion into 1/2 inch dice; cut brussel sprouts in half.

Toss vegetables with salt, pepper, chili powder, and olive oil. Spread across two baking pans. Place pans in oven and roast, 30-40 min.

Slice bacon into thin strips and fry over medium heat. When brown, remove from heat and drain.

When vegetables are cooked, remove them from the oven and combine with honey in a serving bowl. Garnish with bacon and pomegranate arils.
