6 Carrots, cut into chunks
2 Onions, Chopped
2-3 # (or whatever you have, just add more 'other' ingredients)
12 oz beer (I prefer to use Guinness or any other DARK beer)
2 T. seedy mustard
1/4 c brown sugar
1 c. water

Directions:
In a 4-6 qt crockpot, combine carrots and onions. RInse corned beef under cold running water and pat dry. Place in crockpot, pour beer over beef. Rub seasoning packet from meat pkg on top. Mix together mustard & brown sugar and water, spread on top.Cover crockpot and cook on low setting for 8-12 hours (depends on how many #'s of meat.)

To serve, cut corned beef across grain into thin slices. Remove vegetables and serve with beef along.

I like to also serve Roasted Red Potatoes along with Creamed Cabbage (both recipes found under 'Vegetables'.)
