1 (4 lb) stewing chicken cut up
1 tbsp. salt
1 (28 oz) can tomatoes
2 green peppers chopped
1/2 c chopped onion
1 c thinly sliced celery
1/4 c flour
1/4 c water
salt and pepper
1 (16 oz) pkg spaghetti
2 c grated sharp cheddar cheese

Cover chicken pieces with water, add 1 tbsp. salt, cover and simmer until tender, about 2 to 3 hours. Cool. Remove meat from bones and cut into bite-size pieces. Strain chicken stock. Boil hard until only 2 cups stock remain. Add tomatoes, peppers, onion and celery. Cover tightly and simmer 30 min. Add flour to water and mix until smooth. Add to sauce gradually, stirring constantly. Bring to boil and boil 1 min. Season to taste with salt and pepper. Heat oven to 350ºF. Cook spaghetti according to pkg directions and drain. Add to tomato mixture along with cut-up chicken and half of cheese. Pour into greased 13X9 1/2X2" baking dish. Sprinkle with remaining cheese. Bake 1 hour.
