4 large eggs, beaten
3 cups white sugar
2 cups vegetable oil (I use canola oil)
2 cups buttermilk
2 teaspoons baking soda
6 cups all-purpose flour
1 1⁄2 teaspoons salt
2 tablespoons baking powder
3 teaspoons vanilla extract
cinnamon sugar

DIRECTIONS
Preheat oven to 400°F.
In a very large mixing bowl, cream together; eggs, sugar, and oil.
Add buttermilk, baking soda, salt, baking powder.
Gradually beat in flour, and beat until mixture is smooth.
(If you let the batter sit for about 5 minutes after beating in all the flour, it will be easier to put on cookie sheets and won't spread out as much.) Pour by 1/4 cupfuls onto a greased cookie sheet.
Sprinkle tops of cookies with cinnamon sugar.
Bake at 400° for 10 minutes. Watch carefully and do not over bake.
If the cookie springs back when touched, it's done.

I have added extra flour (1 - 2 cups).

Variations add chocolate chips or put frosting on cookies instead the cinnamon sugar. Or just leave plain.

4 oz. of cream cheese
powder sugar
vanilla
milk

crisco frosting
1/2 crisco
powder sugar
pinch of salt
milk
vanilla
