4 cube steaks
1 tsp. pepper
2 tsp. canola oil; divided
1 large carrot, cut diagonally into thin slices
1/2 cup chopped zucchini or 1 large rib of celery thinly sliced
1/2 thinly sliced onion
1 to 2 tbsp. fat-free beef broth
2 tbsp. all-purpose flour
1/4 tsp. salt

Sprinkle the beef with pepper. In a large nonstick skillet, heat 1 tsp. oil over medium-high heat, swirling to coat the bottom. Cook the beef for 3 minutes, or until richly browned. Turn over. Cook for 2 to 3 minutes, or until cooked through. Transfer to a large plate. Cover to keep warm. Add the remaining 1 tsp. oil to the skillet, swirling to coat the bottom. Reduce the heat to medium. Stir in the carrot, zucchini, and onion. Cook for 5 to 7 minutes, or until the carrot and onion are tender-crisp, stirring frequently and adding 1 to 2 tbsp. broth if needed to prevent sticking and burning. In a medium bowl, whisk together the remaining 1 cup broth, flour and salt. Pour into the carrot mixture. Increase the heat to medium high and bring to a boil. Return the beef to the skillet. Reduce the heat and simmer for 2 to 3 minutes, or until the gravy is thickened, stirring constantly. Spoon over the beef.
