1 package of navy beans
2 cups chicken broth
4 cups water
1 tsp salt
1/2 tsp pepper
2 tsp thyme
2 tsp parsley
dash of garlic powder
1/4 tsp dry mustard
1/4 cup onions
1 small ham hock or left over ham for seasoning

Soak beans over night. The next morning drain, pick out beans that aren't good, rinse. Put the beans and the remaining ingredients in a pan. Simmer on low for approx 2 - 21/2 hours, or until beans reach desired softness.

If you have a wood stove, you can also simmer on the outer edge of the stove for 2/3 hours, which is how we normally cook our soup.
