1 egg
1/2 cup milk
1/4 cup veg. oil
1 1/2 c. flour
1/2 c. sugar
2 tsp baking powder
1/2 tsp salt
1 cup fresh blueberries, or 3/4 cup drained, canned blueberries

Directions:
Directions:
1) Heat oven to 375 degrees.
2) Grease bottom of muffin cups or use paper baking cups.
3) Beat egg with fork and stir in milk and oil.
4) In separate bowl, combine the flour, sugar, baking powder and salt.
5) Add the wet ingredients to the dry ingredients, stirring with a spoon.
DO NOT USE A MIXER. Batter should be lumpy. Do not over-stir!
6) Stir in the blueberries, gently.
7) Fill muffin cups 2/3 full. Bake for 20-30 minutes until tops are golden brown.

I used to take Brian and Brad out blueberry picking in Alaska, when we lived there (1982-1986). This recipe was a 'regular' at our house!
