2 1/4 c. chopped pitted dates
1 c. granulated sugar
1 c. water
1 c. chopped nut meats
1 c. shortening (I use butter), at room temp
2 c. brown sugar
3 well beaten eggs
4 c. all purpose flour
1/2 tsp. salt
1/2 tsp. baking soda

Directions:
Directions:
Combine the dates, sugar, and water in a saucepan; cook over low heat till thick. Remove from heat, add nutmeats and cool.
Cream sugar and butter; add beaten eggs.
Sift flour, salt, and baking soda. Mix flour mixture into batter.
Divide mixture into 2 parts and roll each out separately, less than 1/4 inch thick. Spread date filling over and roll like jelly roll.
Chill overnight, slice thick and bake on greased baking sheet in 375º F oven.
Yield: 5-6 dozen

This was a Christmas cookie at our house as long as I can remember. It is also good to make early in season---- freeze ---- bake as needed.
