1 3/4 c flour
1/4 tsp salt
4 tsp baking powder
1 cup mashed sweet potato
1/4 c vegetable oil
1/4 c low-fat milk
1 large egg, lightly beaten
2 T light-brown sugar
pinch nutmeg

Directions:
Directions:
Preheat oven to 425º. In a small bowl, sift together flour, salt, baking powder and nutmeg.

In a medium bowl, stir together sweet potato, oil, milk, egg and sugar. Stir in flour mixture until evenly moistened.

Turn dough onto a well-floured surface. Pat dough into a 3/4 inch thick circle. Cut lengthwise, width wise into squares. Place squares on baking sheet, 1-in apart. Bake until golden, 12 to 15 min.
