1 lb chicken – cooked and diced
1 onion, chopped
1 T. vegetable oil
10 10 inch flour tortillas
1 pkg. taco or fajita seasoning
1 green bell pepper, diced
8 oz shredded Cheddar cheese
1 red bell pepper, diced
8 oz shredded Monterey Jack cheese

Directions:
Directions:
Heat the oil in a large saucepan. Cook and stir vegetables until tender. Add cooked chicken, seasoning and ¼ c. water. Mix well; cook until almost all moisture is gone.

Layer each tortilla with the chicken mixture, and sprinkle with cheeses. Fold tortillas in half and place on a baking sheet.
Bake at 350 until the cheese melts – about 10 minutes.
Serve with Salsa and sour cream.

Optional - instead of baking in the oven, use a panini press.
