3 egg whites
1 tsp vanilla
1/ tsp cream of tartar
Dash of salt
1 cup sugar

Have egg whites at room temperature. Add vanilla, cream of tartar, and dash salt. Beat to soft peaks. Gradually add sugar; beating until very stiff peaks form. (Meringue will be glossy.)
Cover cookie sheet with plain ungreased, brown paper.

For individual meringues: Draw eight circles about 3-1/2 inches in diameter (find a glass or cover to drawn around) on paper. Spread each with 1/4 cup meringue. Using back of spoon shape into shells with a well in center. Then plop a TBL of batter on top. Bake Meringues at 275º for 1 hour. Turn off heat and let dry in oven for about 1 hour. When ready to serve, pop off top, put fruit and ice cream or cool whip in between and put top back on.

For Christy's "cake" we use a 9 inch cake pan to draw a circle on the paper. Then spread all the meringue onto it with a well in the center. The bottom will be about 1/2" thick and the sides about 1-3/4" tall. Bake at 275º for one hour, then leave in closed oven for about 2 hours. (Whatever you have time for) We use a large container of cool whip mixed together with raspberries for the filling, then top with plain cool whip and strawberries on top!
